Locro

Locro, a hearty thick gaucho (cowboy) stew made from various meats, ranging from chorizo to jerky, vegetables, and always some sort of corn, beans, and a regionally unique potato “papa chola” in its base, is the national dish of Argentina. It is popular along the Andes mountain range, and is found in various forms in Bolivia, Peru and Ecuador.
