Texture Control

One of the key ways that we experience food is through its textures. Is it hard or soft? Grainy or smooth? It is tough or tender? Meat thinly sliced on a sandwich tends to be easier to eat than a thicker cut.  A baked cheesecake and a cold pour cheesecake have very different textures. Cheeses, depending upon their water and fat contents, will have a wide variety of textures as well as flavors.  Texture is right up there with flavor in the elements that we balance in our cooking.
