PROPÓSITO

¿QUÉ ES?

Arrowroot powder is a starch obtained from the rhizomes (rootstock) of the plant Maranta arundinaceae. 

It has been traditionally prepared as an easily digestible food for people with dietary issues. It has some beneficial digestive properties.

Today, it’s a very common thickener in both vegan, and flour substitute in gluten-free, and paleo foods. 

EXPERIENCIA

The fresh root, when boiled, tastes like corn. The powder, when mixed with other ingredients, has a fairly neutral taste, although it can impart a mild sweetness, in larger quantities. The starchy powder is culinary alternative to wheat flour, or cornstarch, as a thickening agent, or flour alternative. Although not flavorful, on its own, it absorbs flavor well. Without realizing, you may have experienced its transformative powder in jellies, or sauces.

GEOGRAFÍA CULINARIA

Arrowroot is believed to have originated in Northwest South America.   Today it is grown all in warm tropical climates worldwide. The largest commercial producers are:

  • Australia;
  • The West Indies;
  • India;
  • Sri Lanka;
  • Indonesia;
  • The Philippines.

LA HISTORIA

Arrowroot, archeological evidence suggests, was probably cultivated in the Northwestern part of South America some 7,000+ years ago. The name came somewhat later, when the Arawak people, of the ancient Caribbean, called it “aru-aru” which loosely translates as “the best meal.”  A durable staple, the root was a prized commodity European settlers, in the Caribbean, and in South America, discovered the root, and brought it home to their peoples’ cuisines.
