PURPOSE
WHAT IS IT?
The aji paprika chile is a variety of Capsicum baccatum (a chili pepper) is a South American medium size, cone-shaped chile known for it’s oddly aromatic orange flavor and mild heat.
EXPERIENCE
Contrary to the expectation of “chile” peppers, this chile has no bite but boasts bright flavors of orange juice and mild sweetness. Toasted, the aroma of citrus becomes dominant and the pepper flavor falls behind, with barely any spicy heat.
TRADITIONAL USES
- Peruvian Soups
- Salsa
- Spicy sauces
- Added to baked goods
IMPROVISATIONAL ‘RIFFS’
- Toast and steep in oil for a sweet-smoky finishing oil
- Rehydrate and blend into tomato soup for warmth without sharp heat
- Simmer whole in rice while cooking, then remove before serving
THE BACKSTORY
Some form of the word ají has been used since approximately 4600 BCE. It was first used in the proto-language Otomanguean. It then spread along with the Capsicum fruit from Mexico to other pepper growing regions. Capsicum baccatum is still referred to as ají, while other peppers in the family are referred to as simply “peppers.”
