PURPOSE

WHAT IS IT?

The Aleppo pepper gets its name from the city of Aleppo, this popular spice is used on everything from meats to grilled foods. Unlike more common red chile flakes, aleppo peppers are much milder in heat, in addition, these peppers are often cured in salt before they’re dried.

EXPERIENCE

The oil-heavy flakes have an intense fruity aroma that gives way to something at once earthy and tart. The heat is intense but brief, giving way to a slight smoldering sting on the tongue. The overall flavor is bright, much like fresh tomatoes, and it shares their savory quality. The result of the salt cured flakes is slightly salty with flavors of raisins, prunes, and sun-dried tomatoes

CULINARY GEOGRAPHY​

The pepper is named after Aleppo, a long-inhabited city along the Silk Road in northern Syria, and is now grown in Syria and Turkey. Most commonly served as a condiment or seasoning in the Mediterranean, Aleppo is not limited to any dish and is often sprinkled on every savory dish like salt and pepper.

  • Toss over burrata with olive oil and charred lemon
  • Stir into melted butter for grilled prawns or lobster

THE BACKSTORY

The Aleppo pepper has a medium heat level of about 10,000 on the Scoville scale, with some fruitiness and mild cumin undertones. Its flavor is similar to it’s cousin the ancho chile, but heavier on the palate in the sense that it’s oilier and slightly salty; from the the drying process.
