PURPOSE

WHAT IS IT?

Cajun cuisine is an intriguing style of food found in Louisiana that is influenced by the French, African, Italian, Caribbean, Portuguese, and local Native American tribes. A bold mix of mire poix, roux, crawfish, okra, and chile peppers somehow play nicely in a curious cuisine.

EXPERIENCE

Cajun seasoning is a seasoning consisting of of salt, pepper, cayenne, garlic powder, chili powder and spices. Slightly hot and pungent this mix is excellent in any savory application, especially when prepared in the “holly trinity” of sautéing vegetables: onion, green pepper, and celery.

CULINARY GEOGRAPHY

Cajun seasoning is a blend with heavy roots in Louisiana, where it remains popular. Around 1775  the French Acadian people were deported by the British from the Canadian Acadia to the Acadiana region of Louisiana. The French influence on cajun seasoning would be considered a part of rustic cuisine; focusing on locally available ingredients and simple preparations.

THE BACKSTORY

Cajun and Creole label have been mistaken to be the same, but thank to the chef Paul Prudhomme who popularized the cuisine and distinguished the two styles. The origins of Creole cooking began in New Orleans, and Cajun cooking came 40 years after the establishment of New Orleans down south on the bayou. Today, most restaurants serve dishes that consist of Cajun styles, which Paul Prudhomme claims to be true “Louisiana cooking.”
