PURPOSE

WHAT IS IT?

The Calabrian chile pepper is a small, round, burgundy red variety of Capsicum annuum native to Calabria, Italy and often found dried, pickled or stuffed.

EXPERIENCE

These whole peppers are dark red in color and were aged on the vine to ensure a more punchy heat and fruitier taste. This chili ranges from 25,000 to 40,000 on Scoville Heat Scale, with just enough head to be your main spice in a dish.

CULINARY GEOGRAPHY​

Calabrian peppers are a chile that originates in Calabria, Italy. They are used in cuisines surrounding the Mediterranean, yet can technically only be grown in the Calabria region to have the title.

TRADITIONAL USES

  • Antipasto
  • Added to pasta
  • Stuffed with tuna
  • Oil based sauces and dressings

IMPROVISATIONAL ‘RIFFS’

  • Crush into hot honey for pizza or fried chicken
  • Blend into tomato butter for grilled seafood
  • Steep in olive oil with garlic for pasta finishing oil

THE BACKSTORY

Calabrian chile peppers, like other members of Capsicum annuum contain high amounts of vitamin C, higher than citrus. Chile peppers also contain vitamins A and B-6, potassium, iron and magnesium. The spicier peppers contain capsaicin (only suggested for consumption if heat doesn’t already irritate the stomach), which has been shown to help stimulate the circulatory and digestive systems.
