THE BARTENDER’S BOOK
Chivas Regal Ultis opens with soft honey, ripe pear, and peach, moving into creamy malt, vanilla, and gentle spice, then finishing smooth and layered with light oak and a subtle floral lift; crafted as a blended malt Scotch whisky using only single malts from five Speyside distilleries, including Strathisla, it highlights a richer malt-driven texture and added depth, while maintaining Chivas’ signature balance and polished integration rather than overt weight or smoke.
TASTING NOTES
Taste is more than flavor. It is the full conversation between glass, nose, mouth, and memory. Here, we break each spirit into four parts:
AROMA
Ripe peach, red apple, honey, cinnamon, vanilla fudge, soft malt, and a light floral Speyside note.
PALATE
Milk chocolate, clementine, orange peel, peach, caramel, honeyed malt, clove, cinnamon, and rounded orchard fruit.
FINISH
Long, sweet, smooth, and gently spiced, with lingering fruit, chocolate, caramel, and warm malt.
TEXTURE
Fuller and more luxurious than the standard Chivas blends, with a smooth, rounded, malt-heavy body.
Chivas Regal Ultis moves Chivas into a richer, more malt-forward register. Peach, red apple, honey, citrus, milk chocolate, caramel, cinnamon, and clove give it more depth and texture than the standard Chivas line. It keeps the polished house style, but with more weight, fruit, and malt character.
STRAIGHT TALK
Chivas Ultis is the bottle for someone who likes the Chivas idea but wants more substance. It is smoother and more refined than loud. It is not peat-driven. It is not a sherry bomb. It is not trying to out-muscle a single malt. Its strength is integration: five Speyside malts blended into one polished, fruit-rich profile.
The label can confuse people, because “blended malt” sounds like regular blended Scotch. It is not the same thing. A blended malt is made from malt whiskies from more than one distillery, without grain whisky. That gives Ultis more malt depth and body than the standard Chivas blends.
THE MIX
From a culinary-pairing standpoint, Chivas Ultis belongs with flavors that echo fruit, malt, spice, and cream. Think peach, apple, orange zest, honey, cinnamon, clove, vanilla, caramel, milk chocolate, almond, hazelnut, black tea, and lightly toasted pastry. It also pairs well with aged cheese, roasted nuts, glazed pork, mushroom dishes, and desserts built around orchard fruit or warm spice.
The Jazz Chef angle: this is Chivas with the grain whisky stepped aside, letting the Speyside malt section play the melody.
A DISTILLER’S TALE
Chivas Regal Ultis was launched in 2016 as the first blended malt Scotch whisky from the House of Chivas Regal. It was built from five Speyside single malts and created as a tribute to five Chivas master blenders who helped shape the house style since 1909.
The five-malt idea became part of the bottle’s identity, including the five copper rings around the bottle neck. The newer Chivas Ultis XX expression adds a different structure: Chivas says Ultis XX blends five single malts with Strathclyde grain whisky and is matured for at least 20 years, which makes it a different product from the original blended-malt Ultis.
MY TAKE
Chivas Regal Ultis is Chivas with more backbone. The honey, fruit, and polish are still there, but the malt character gives it more depth and a better finish. Peach, apple, citrus, chocolate, caramel, and spice move cleanly through the glass. It is not wild. It is not smoky. It is Chivas doing elegance with more weight.
