PURPOSE

WHAT IS IT?

The coconut tree (Cocos nucifera) is a member of the family Arecaceae (palm family) and the only species of the genus Cocos. The term coconut can refer to the whole coconut palm or the seed, or the fruit which botanically is a drupe, not a nut.

EXPERIENCE

To create these delightful chips, small blades cut wafer-thin crescents of flesh from a fresh coconut, which are then quickly hot air dried into these delightful chips. Still retaining much of their natural oils these chips are unexpectedly loaded with tropical coconut flavor.

CULINARY GEOGRAPHY​

The origin of the plant is, after many decades, still the subject is up for debate. It has generally been accepted that the coconut originated in the Indian-Indonesia region and float-distributed itself around the world by riding ocean currents.

TRADITIONAL USES

  • Sprinkled over salads
  • Added to trailmix
  • Used for baked goods
  • Added to baked goods and desserts

IMPROVISATIONAL ‘RIFFS’

  • Toast until brittle and golden → scatter over curries or noodle bowls
  • Crush lightly into crunchy topping for ice cream or pudding
  • Toss with chile oil and lime salt for bar snack mix

THE BACKSTORY

Coconuts contain medium chain triglyceride (MCTs) medium length fatty acids. They go straight to the liver from the digestive tract, where they are used as a quick source of energy or turned into so-called ketones, which can have therapeutic effects on brain disorders like epilepsy and Alzheimer’s.
