PURPOSE
WHAT IS IT?
Cubeb (Piper cubeba) is a plant in genus Piper, cultivated for its fruit and essential oil. It is mostly grown in Java, hence it’s known as Java pepper. The fruits are gathered before they are ripe, and carefully dried. Commercial cubebs consist of the dried berries, similar in appearance to black pepper but with their stalks attached.
EXPERIENCE
A member of the pepper family, cubeb has a peppery, bitter, pungent flavor that’s tinged with a hint of allspice and nutmeg.

THE BACKSTORY
According to legend, the king of Portugal banned the import of cubeb berries from Java to boost the sale of black pepper to better encourage trade relations with India and the rest of Europe. (At the time Java had a monopoly on the native spice. Spice merchants would even sterilize the seeds to ensure they could not be grown on foreign soils.)
