PURPOSE

WHAT IS IT?

Mole is the generic name for a number of sauces originally used in Mexican cuisine, as well as for dishes based on these sauces.Throughout Mexico you’ll find different variations of the traditional sauce such as mole poblanomole negro and mole verde to name a few. The common denominator between all the styles is the use of chocolate, chiles, salt, cloves, pepper, and cinnamon.

EXPERIENCE

Sauces are, naturally, the classic application for this particular blend of spices. There are many specific flavors in Mexican foods that style the cuisine such as chiles and cumin, although mole is the only traditional sauce that features chocolate. The flavor is savory, spicy, warming and slightly sweet from the use of cloves and cocoa.

CULINARY GEOGRAPHY

Three states in Mexico claim to be the origin of mole: Puebla, Oaxaca, and Tlaxcala. The states with the best known moles are Puebla and Oaxaca, but other regions in Mexico and South Western America also make various types of mole sauces.

THE BACKSTORY

A common legend of its creation takes place at the Convent of Santa Rosa in Puebla early in the colonial period. Upon hearing that the archbishop was going to visit, the convent nuns went into a panic because they were poor and had almost nothing to prepare. The nuns prayed and brought together the little bits of what they did have, including chili peppers, spices, day-old bread, nuts, and a little chocolate. They killed an old turkey, cooked it and topped it with their improvised sauce. The archbishop adored it, and the rest is history.
