PURPOSE
WHAT IS IT?
A fajita comes from the Spanish word “raja” meaning skirt, most commonly referring to skirt steak or any seasoned and grilled food usually served as a taco on a flour or corn tortilla. This seasoning mix has all the spices and flavor you need to build your dream fajita.
EXPERIENCE
The list of spices needed for traditional fajitas is extensive, but this blend helps save money and kitchen cabinet space. Garlic, cumin, cilantro, cayenne, salt, sugar, a bit of hickory smoke flavor and plenty of other fragrant spices come together in this marinade blend.
CULINARY GEOGRAPHY
Fajitas are considered a part of Tex-Mex cuisine, with heavy influences of latin flavors. The first culinary evidence of fajitas with a specific flavor profile and cooking style goes back as far as the 1930s in the ranch lands of South and West Texas. During cattle roundups, cows were butchered regularly to feed the workers. Throwaway items such as the hide, the head, the entrails, and meat trimmings such as the skirt were given to the Mexican cowboys called vaqueros as part of their pay.

THE BACKSTORY
