PURPOSE

WHAT IS IT?

The shallot is a type of small onion, specifically a of the species Allium cepa, onion family. In most of India shallots are very popular, yet the distinction between onions and shallots is weak. larger varieties of shallot are sometimes confused with small red onions and used interchangeably. Indeed, most parts of India use the regional name for onion interchangeably with shallot

EXPERIENCE

Shallots are pungent with the flavor of onion, but are mellower, sweeter, and have hints of root vegetable and sweet vinegar to them. They lend their flavor beautifully in hot oil.

CULINARY GEOGRAPHY​

Shallots most likely originated in Central or Southwest Asia, travelling from there to India and the eastern Mediterranean. Because shallots boomed in popularity and they grow easily like large onions, they are now growing all over the world.

TRADITIONAL USES

  • Use them as a replacement for fresh shallots
  • Add to hot oil when sautéing
  • Add to instant soups when traveling
  • Shallot pickles

IMPROVISATIONAL ‘RIFFS’

  • Blend into mayo → shelf-stable shallot aioli without moisture
  • Toss directly into hot pasta with butter → rehydrates in the sauce
  • Grind with salt → shallot finishing salt for eggs and vegetables

THE BACKSTORY

Shallots probably originated in Central or Southwest Asia, travelling from there to India and the eastern Mediterranean. The name “shallot” comes from Ashkelon, an ancient Canaanite city, where people in classical Greek times believed shallots originated.
