PURPOSE
WHAT IS IT?
Harissa (Arabic: harīsa) is a Maghrebi hot chili pepper paste. The main ingredients in this fiery seasoning are roasted red peppers, hot chili peppers, spices such as garlic paste, coriander seed, saffron, rose, caraway, as well as some vegetable oil for preservation. A truly special blend of difficult to find spices, all mixed into one balanced seasoning.
EXPERIENCE
Harissa is the result of the many spice trades that passed through Tunisia. It’s rare to find such a unique blend of spices that take inspiration from so many corners of the globe. Caraway, sumac, cumin, coriander, garlic, vinegar powder, paprika, and numerous chili families all blend elegantly in this fiery red powder.
CULINARY GEOGRAPHY
Harissa is sourced from Tunisia, which is the very northern country on the African continent. Bordering the Mediterranean sea, Tunisia has a rich culinary history that takes inspiration from Morocco, Italy, France, Spain, Greece, and Egypt.

THE BACKSTORY
As with the European cuisine, chili peppers were imported into Maghrebian cuisine via the Columbian Exchange, more than likely during the Spanish occupation of Tunisia between 1535 and 1574. Recipes for harissa vary according to the household and region.
