PURPOSE

WHAT IS IT?

Chili powder is the dried, pulverized fruit of one or more varieties of chili blended with cooking spices. It is used as a spice to add pungency and piquancy to dishes. Chili powder is often confused with cayenne pepper but most certainly not a substitute. Cayenne pepper is pure ground dried chiles and the case of this HOT chili powder, the heat has been kicked up a few notches.

CULINARY GEOGRAPHY​

Chili powder blends are especially popular in Latin American cuisine, where they are the primary flavor ingredient in meat and bean chili stews.

TRADITIONAL USES

  • Key ingredient to meat rubs
  • Add to guacamole

IMPROVISATIONAL ‘RIFFS’

THE BACKSTORY

Before World War II, hundreds of small, family-run chili parlors (also known as “chili joints”) could be found throughout Texas and other states, particularly those in which émigré Texans had made new homes. Each establishment usually had a claim to some kind of secret recipe, the only major similarity between every one of them was the use of hot chili powder.
