PURPOSE

WHAT IS IT?

This paste is triple-fold, meaning it has a 3-1 concentration of vanilla to liquid and so the paste is intensely viscous and so dense with vanilla seeds and flavor.

EXPERIENCE

The floral, creamy, and berry notes in this paste are screaming with ripe flavors. Madagascar beans are especially popular for their intense vanilla-ness, creamy flavor, and hints of smoke and tobacco.

CULINARY GEOGRAPHY​

This bean is grown in Madagascar, although the vanilla planifolia species is originally from Meso-America and is only able to grow within 10 to 20 degrees north and south of the equator.

IMPROVISATIONAL ‘RIFFS’

  • Mix into mayo → use on lobster rolls or shrimp sandwiches
  • Add to tomato sauce in small quantity → rounds acidity without sweetness read
  • Fold into ricotta + salt → spread for toast with olive oil

THE BACKSTORY

Many people have tried to re-locate the vanilla plant, but initially failed because those locations did not have the Melipone Bee. Now, in in other parts of the world, humans must hand-pollinate the vanilla vines.
