THE BARTENDER’S BOOK

Martini Riserva Speciale Rubino Vermouth (750 mL, 18% ABV) is a premium Italian vermouth from Martini & Rossi’s Riserva line, crafted in Turin with a base of Langhe Nebbiolo wine. Infused with select botanicals, including red sandalwood and Italian herbs, it achieves a rich ruby hue and layered aromatic profile. On the nose, it reveals dried fruits, bitter herbs, and subtle spice; on the palate, it balances deep red-wine character with complex herbal bitterness, finishing long and elegant. Designed for sipping over ice or as a refined ingredient in cocktails like the Negroni or Vermouth & Tonic, Rubino highlights the sophistication of Piedmontese winemaking and traditional vermouth craftsmanship.

TASTING NOTES

Taste is more than flavor. It is the full conversation between glass, nose, mouth, and memory. Here, we break each spirit into four parts:

AROMA

Red berries, blackcurrant, raspberry, strawberry, redcurrant, orange peel, black pepper, wormwood, herbs, faint sandalwood, vanilla, clove, warm spice, and a wine-forward fruit note. Difford’s Guide notes black pepper, strawberries, raspberries, redcurrant, wormwood, herbal aromas, and faint sandalwood.

PALATE

Red berry fruit, cassis, bittersweet grape, wormwood, black pepper, woody tannin, mild sweetness, quinine, clove, vanilla, herbs, and bitter botanical structure. Public notes consistently place it in a fruit-spice-bitter vermouth lane rather than a simple sweet vermouth lane.

FINISH

Medium to long, fruity, bitter, herbal, and lightly tannic, with lingering wormwood, spice, red fruit, quinine, and woody dryness.

TEXTURE

Fuller-bodied and more structured than standard commercial sweet vermouth, with a smooth, slightly oily mouthfeel and a tannic edge from the wine and botanical structure. A retail tasting note describes it as having a “beautiful oily body,” mild palate, light sweetness, fruit, and a fruit-bitter finish.

Martini Riserva Speciale Rubino is a deeper, more serious red vermouth: ruby-colored, fruit-led, spicy, woody, herbaceous, and bitter. It sits above standard Martini Rosso in structure, botanical definition, and wine character.

STRAIGHT TALK

This is one of Martini’s better premium vermouths, and it is meaningfully different from basic Martini Rosso. The strength is balance: red fruit, bitterness, spice, wormwood, sandalwood, and tannin all show up clearly. The limitation is that it is still a large-brand vermouth, not a tiny artisan bottling; the profile is polished and consistent rather than wild or rustic.

Availability Note:
No major rarity note needed. It is a commercial premium vermouth, but U.S. and international availability can vary by retailer and market.

THE MIX

Neutral flavor-neighborhood only: red fruit, cassis, wormwood, sandalwood, black pepper, clove, vanilla, bitter herbs, quinine, and wine tannin.

Citrus:
Orange peel, blood orange, bitter orange, lemon zest.

Fruit:
Blackcurrant, raspberry, strawberry, redcurrant, cherry, red grape.

Spice / Herbs:
Artemisia, wormwood, black pepper, clove, sandalwood, bitter herbs, quinine, mint-like herbal notes.

Sweet / Dessert Notes:
Vanilla, red fruit preserve, dark cherry, caramelized sugar, spiced berry compote.

Savory / Food Pairings:
Olives, aged cheese, roasted mushrooms, cured-meat notes, dark bread, toasted nuts, tomato-based dishes.

Jazz Chef angle:
Rubino is Martini in a darker suit: red berries, bitter herbs, sandalwood, pepper, and wine tannin carrying a polished Torino groove.

A DISTILLER’S TALE

Martini & Rossi was founded in the nineteenth century and became one of the defining names in Italian vermouth. Riserva Speciale Rubino was created as part of Martini’s return to a more premium Vermouth di Torino style, emphasizing Italian wine, selected botanicals, and deeper structure. The “Rubino” name refers to its ruby color, while the botanical profile leans on red sandalwood, artemisia, bitter herbs, and spice.

MY TAKE

Public perception is strong for a widely available premium vermouth. Difford’s Guide gives it a serious tasting read, with red berries, wormwood, black pepper, sandalwood, quinine, sweetness, and tannin all clearly noted. User commentary on Difford’s also tends to frame it as a substantial upgrade over standard Martini Rosso.

The Jazz Chef take: this is the Martini bottle that reminds people Martini can make a real vermouth. Not obscure, not precious, but properly built: red fruit, bitter herbs, sandalwood, pepper, and enough tannin to give it backbone.
