PURPOSE

WHAT IS IT?

The coconut tree (Cocos nucifera) is a member of the family Arecaceae (palm family) and the only species of the genus Cocos. The term coconut can refer to the whole coconut palm or the seed, or the fruit which botanically is a drupe, not a nut.

EXPERIENCE

Not quite a powder and not as chunky as flaked or fancy coconut. Medium desiccated coconut shines in pastries, it was made for being gently folded into batters and meringues.

CULINARY GEOGRAPHY​

The origin of the plant is, after many decades, still the subject is up for debate. It has generally been accepted that the coconut originated in the Indian-Indonesia region and float-distributed itself around the world by riding ocean currents.

TRADITIONAL USES

  • Sprinkled over salads
  • Added to trail trailmix
  • Used for baked goods
  • Curry garnish

IMPROVISATIONAL ‘RIFFS’

  • Toast and fold into curry rice with fried shallots
  • Mix into biscuit or scone dough for subtle richness
  • Blend into dry rubs for pork with chile and brown sugar

THE BACKSTORY

Coconuts contain medium chain triglyceride (MCTs) medium length fatty acids. They go straight to the liver from the digestive tract, where they are used as a quick source of energy or turned into so-called ketones, which can have therapeutic effects on brain disorders like epilepsy and Alzheimer’s.
