TASTING NOTES
Taste is more than flavor. It is the full conversation between glass, nose, mouth, and memory. Here, we break each spirit into four parts:
AROMA
Rich dried fruits, mellow prickle, buttered scones, lime marmalade, citrus, golden raisins, ginger, oak polish, and a lightly savory/meaty Mortlach undertone. Official notes describe the nose as rounded, with dried fruits, fresh-baked buttered scones, lime marmalade, and a subtle savory edge.
PALATE
Sherry fruit, dates, caramel, dark spices, oak tannin, ginger, pepper, raisins, bitter lemon peel, and Mortlach’s lightly savory weight. Whisky Advocate describes the palate as voluptuous, with sherry, dates, caramel, dark spices, and oak tannins.
FINISH
Long, drying, spicy, and slightly meaty, with licorice, chile-like warmth, dark fruit, oak tannin, bitter citrus, and lingering sherry depth.
TEXTURE
Medium to full-bodied, strong, smooth, and cask-strength, with the weight and grip expected from Mortlach at 56.9% ABV. Official materials list the body as medium to full.
Mortlach 21 Year Old Special Release 2020 presents an older, sherry-finished version of the Beast of Dufftown: dried fruit, golden raisin, dates, caramel, buttered scone, lime marmalade, ginger, dark spice, oak tannin, licorice, and a restrained savory/meaty edge.
STRAIGHT TALK
This is a serious limited Mortlach release: old enough to carry maturity, strong enough to retain structure, and sherry-finished enough to show rich fruit and spice. Its strengths are age, cask strength, PX/Oloroso depth, and the sweet-savory Mortlach signature. Its limitation is expectation management: several reviewers note that it is not as aggressively meaty or heavy as Mortlach’s nickname might suggest. It reads polished and sherry-led, not feral.
Availability Note:
This was a limited 2020 Diageo Special Release with 7,692 bottles, so it is no longer a regular retail bottle. Availability is now specialist-retail, collector, or secondary-market dependent.

A DISTILLER’S TALE
Mortlach is one of Speyside’s most distinctive distilleries, known for its robust character and its unusual 2.81 distillationprocess. The 2020 Special Release leaned into that identity with a 21-year-old cask-strength whisky finished in PX and Oloroso-seasoned casks. The result is Mortlach made more polished and layered: still savory at the edges, but dressed in dried fruit, sherry sweetness, spice, and mature oak. Diageo’s own description links the layered result to the complexity of Mortlach’s 2.81 distillation.
MY TAKE
Public perception is strong but not breathless. Distiller shows a small community rating of 4.25/5, and Whisky Advocate rated it highly enough to place it in the premium Special Release conversation, while independent reviewers often praise the quality but note that the meaty Mortlach character stays somewhat restrained.
The Jazz Chef take: this is polished Beast, not wild Beast. The sherry casks bring dried fruit, caramel, spice, and tannin; Mortlach brings enough savory shadow to keep it from becoming just another luxury sherry malt.
