PURPOSE

WHAT IS IT?

Nutmeg (also known as pala in Indonesia), nutmeg is the seed of the tree, roughly egg-shaped and about 20 to 30 mm wide. The tree produces two different spices; Nutmeg and Mace. Although the two spices are similar, mace is the exterior of the fruit and not quite as popular as nutmeg which is used and loved globally.

EXPERIENCE

Nutmeg has a warm, spicy aroma and flavor and can be used in sweet and savory cooking. It’s unique, slightly sweet and peppery, definitely a classic “baking spice.”

CULINARY GEOGRAPHY​

Nutmeg comes from an evergreen tree native to the Banda Islands near Indonesia, but has been cultivated throughout the tropics by both native cultures and foreign.

  • Aids sleep and digestion

IMPROVISATIONAL ‘RIFFS’

  • Stir into béchamel → deeper backbone for pasta or gratins
  • Add to mashed potatoes with butter and salt
  • Mix into ricotta → filling for pasta or toast spread

THE BACKSTORY

European folk remedies for sleep often included adding a pinch of powdered nutmeg to a glass of warm milk. The chemical compounds in nutmeg actually do aid sleep, not only was this a promising treat for children but it was effective.
