PURPOSE
WHAT IS IT?
The slender, mahogany-red colored peppers are part of the Capsicum annuum family. The puya chile is used whole, primarily for its fruity flavor instead of its texture due to the flesh of the pepper being too thin to cook or grill.
EXPERIENCE
On the palate the puya chile is dusty, dry, and pungent. The secondary flavor is similar to young dark cherries – sweet and slightly tart. Instead of a stinging heat, expect a growing burn that’ll persistently linger for while on your tongue.

THE BACKSTORY
The puya chile resembles the guajillo chile, and the two peppers are often labelled and sold unaccurately, keep this in mind when shopping for them. Although the peppers look similar, the puya is found in a smaller size and has a fruitier and hotter taste.
