PURPOSE

WHAT IS IT?

Crushed red pepper is a condiment consisting of dried and crushed cayenne peppers. Perhaps you’ve seed crushed red pepper under the name red pepper flakes, besides the grind, these spices come from the exact same thing.

EXPERIENCE

Spicy red pepper flakes contain both the dried flesh of the pepper and the seeds. Both are cured and lightly toasted to create a smoky and spicy pepper flake. These pepper flakes are next level HOT!

CULINARY GEOGRAPHY​

Capsicum annuum, can be grown in a variety of locations including tropical and temperate zones. Desired for it’s medium-high head and neutral flavor, it’s grown in most regions around the world.

TRADITIONAL USES

  • Pizza topping
  • Meat rub
  • Pickling agent
  • Added to tomato pasta sauces

IMPROVISATIONAL ‘RIFFS’

  • Bloom in hot oil → spoon over anything as a finishing oil
  • Toss with honey + butter → glaze for wings or shrimp
  • Add to garlic butter → baste steak or mushrooms

THE BACKSTORY

If you’ve ever eaten a chili pepper, you might have noticed that the second bite is hotter than the first. Some people believe it’s because the seeds are the spiciest part, but it’s actually the flesh near them that sets your tongue on fire.
