PURPOSE

WHAT IS IT?

Scotch bonnet, is a variety of chili pepper (Capsicum annuum), famed for its intense heat and named for its resemblance to a tam o’ shanter hat. For an idea of how hot this pepper is, it happens to be around ten times hotter than a serrano pepper.

EXPERIENCE

The Scotch bonnet has a sweet flavor to it that is barely detectable with the overpowering heat. Most Scotch bonnets have a heat rating of 100,000–350,000 Scoville units, which ranks them pretty darn high on the scale.

CULINARY GEOGRAPHY​

The scotch bonnet is a popular chile used in Caribbean, African, and Haitian cuisine. A necessary ingredient in the always-popular jerk seasoning. It is found mainly in the Caribbean islands, Guyana, Maldives, Panama and West Africa.

TRADITIONAL USES

  • Hot sauce
  • Jerk seasoning
  • Salsa
  • Soup

IMPROVISATIONAL ‘RIFFS’

  • Simmer whole in curry goat or chicken, then remove before serving
  • Infuse vinegar with one pepper for Caribbean-style table sauce
  • Blend with mango into bright hot sauce

THE BACKSTORY

The Scotch Bonnet and Habanero are actually cousins within the same family of peppers. Both are a variety from the Capsicum Chinese chili plant. However, the Habanero was domesticated in the Amazons and eventually found its way to Mexico and South America, where it is most popular. The Scotch Bonnet is of Jamaican origin and most common in Caribbean cuisine.
