PURPOSE

WHAT IS IT?

Vanilla is a flavoring derived from orchids of the genus Vanillaflat-leaved vanilla (V. planifolia). The word vanilla, derived from the diminutive of the Spanish word vaina (vaina itself meaning sheath or pod), is translated simply as “little pod.”

EXPERIENCE

The flavor is earthy with tones of milk-chocolate. The flavor is very assertive as these vanilla beans produce a very high amount of vanillin, making them perfect for rich desserts and chocolates.

CULINARY GEOGRAPHY​

The plant originally came from Mesoamerica, including parts of modern day Mexico and Guatemala. Of todays market, 75% of vanilla is derived from vanilla plants in Madagascar and Réunion.

  • Vanilla Cake

IMPROVISATIONAL ‘RIFFS’

  • Split and scrape → steep pods in cream for custards or ice cream
  • Drop whole into sugar jar → slow vanilla sugar build
  • Infuse into dark rum or bourbon → long extraction, keep the pod in

THE BACKSTORY

Vanilla is notoriously sensitive, even with years of selective breeding to toughen them up. The plants are carefully grafted with the flowers seasonally pollinated by hand. It then takes the seed pods six months to form and mature before they can be harvested. The pods then go through a complicated and extensive curing process that lasts another six months before being graded for quality based on size, appearance, moisture content, and aroma before being sold.
