PURPOSE
WHAT IS IT?
Vindaloo (also known as vindalho) is an Indian curry dish popular in the region of Goa, the surrounding Konkan, and many other parts of India. Story has it that the word vindaloo is a garbled pronunciation of the popular Portuguese dish carne de vinha d’alhos (meat marinated in wine-vinegar and garlic), which made its way to India in the 15th century along with Portuguese explorers and the important addition of Chile peppers. Upon arrival the dish was tweaked to local conditions: there was no readily available wine-vinegar in India, so Franciscan priests fermented their own from palm wine. Local ingredients like tamarind, black pepper, cinnamon, and cardamom were eventually incorporated.

THE BACKSTORY
Vindaloo curry powder originates from the Goa region of India. The Portuguese conquered the region in the 16th century and ruled for about 450 years until it was annexed by India in 1961. The Portuguese settlers, seeking comfort in food from home, developed a version of a classic adobo dish called vinha d’alhos made with red wine and chilies.
