PURPOSE
WHAT IS IT?
Ají Panca, is a Peruvian chile pepper with a low heat, and a mild flavor with fruity notes, in its thick flesh. It turns a deep red burgundy color, like a kumato tomato, when ripe. De-pith, and deseed it, and you have only its major flavor. It is an obsession, in Peru. Panca is second, in popularity only to aji amarilo, in their cuisine. It is used in all kinds of powders, pastes, sauces, and more.
EXPERIENCE
Sweeter, and less spicy, than Peru’s top pop pepper, aji amarillo, it has a slightly smoky finish, with exceptional aromas that some liken to berries, or cooked red bell pepper. Heat ranges from a mild 500 to 1,500 SHU. If you’re looking for a pepper big on flavor, but that won’t challenge friends, or family that are spice averse, this is it!
CULINARY GEOGRAPHY
Native to South America, aji panca chiles originated either in the range between Peru and Bolivia, or the Southern Part of Brazil. Today, they grow in Peru‘s coastal forests, primarily in the province of Cajamarca, and in the Cutervo and San Pablo districts. Commercially, they are also grown, on a much smaller scale, in other South, and Central American countries, ranging north as far as Mexico.
TRADITIONAL USES
- Peruvian Pollo a la Brasa;
- Antichucos - a beef on a skewer;
- Sauce, paste, infused oils, and other condiments;
- Pachimanca - meats, habas (lima beans), potatoes and choclo that are cooked in the ground using hot stones;
- Seafood soups like Chupe, or Parihuela.
IMPROVISATIONAL ‘RIFFS’
- Chocochile ice cream has a little aji panca powder, and a touch of cinnamon, with a bit of cacao nibs, for crunch;
- Peruvian pisco pink shrimp linguine has a touch of aji panca, for flavor;
