There are a LOT of vanilla sugars out there. You can make your own, too, but, for finish work, inconsistent results can make whatever you’re topping look pretty sloppy.

Lars Own is my Swedish sugar go-to. This Vanilla Powdered Sugar, whether you’re making a quick icing, or just powdering a Swedish crepe (pannkakor), gives you a great, balanced taste, and hides the very finely ground bits of vanilla bean pretty darn well. 

What It Does

Powdered sugar is made of finely ground sugar, and an anti-caking agent/thickening agent, most often potato starch, or cornstarch. It’s most often used either as a finishing topping, as one might find on a bundt cake, or chocolate waffle, or as a basis for all kinds of icings. 

THE Ingredients

  • Sugar
  • Starch
  • Glucose syrup
  • Spent vanilla powder
  • Vanillin

Spent vanilla powder is a powdered vanilla bean from which the richer seeds have been extracted.  The pods have great aroma, though.  Lars’ own crushes them down to such a fine powder, that you don’t get the kind of black specks, from similar spent vanilla, that is crushed to a larger, more visible point, in competitors’ products.

My Take

Go Swedish! I’ve tried a number of different vanilla powders. I’ve even made my own. For the time that it takes to get a vanilla bean husk dried and reduced, I would rather buy a great product. 
 
It evenly distributes the tiny bits of vanilla bean because they’re almost the size of the sugar. It binds well, whether you’re making a royal icing (water/egg white) or buttercream frosting.
 
The flavor is very clean, and doesn’t have that hyper-sweetness that some highly refined sugar powdered sugars posess.
 
Lars’ Own has been one of my go-to manufacturers for sugars, in my baking, for a long time.  I give it my Five-Diamond Choicestuff™ award for its consistent high quality. It’s worth the “import” price, if you want your baking/confectionary to be as top flite as the ingredients in it.
